Innovation and development of agro-industrial products for the promotion of experiential tourism

Abstract
The scarce articulation between agroindustrial innovation and experiential tourism in rural contexts in Latin America represents a persistent problem that limits the exploitation of the productive, cultural and territorial potential of these regions. Despite the wealth of agroindustrial resources, factors such as lack of training, investment and institutional articulation prevent the conversion of these assets into sustainable tourism experiences. To address this phenomenon, a mixed methodology was applied with a literature review of 305 articles indexed in Scopus (2020-2025) and closed Likert-type surveys to a random sample of 20 actors linked to rural enterprises. The objective was to analyze how innovation in agroindustrial products can promote experiential tourism and contribute to sustainable development. The results show that 85% of the respondents perceive this articulation positively; however, 75% consider the available training to be insufficient, while 80% identify lack of investment as a critical barrier. Despite these limitations, 90% see development opportunities in the valorization of local products and the strengthening of territorial identity. It is concluded that integrating agroindustrial innovation and experiential tourism is viable and strategic, provided that participatory policies are implemented to strengthen local capacities and collaboration networks.
